I'm a real oatmeal cookie monster... I just counted, and as of January 2018, I've shared 47 oatmeal cookie recipes with you. Eep! Have you ever tried any of them yet? (? You'll find all my oatmeal cookie recipes right there!) They are some of the most well-known recipes on my website cause they taste very sweet and comfy, just like conventional"indulgent" oatmeal cookie recipes, but they contain no refined sugar or bread!
So you will begin with whole wheat flour (or gluten free, if you want ) and prompt oats (like those... or these for a gluten-free edition!) . Instant oats are smaller and thinner than conventional rolled oats, and you are able to see them in canisters right alongside those old-fashioned oats at the grocery shop.
I probably sound like a broken record by now... But because I ? you and need your cookies to flip out absolutely plump this article and soft, I am reminding you again... Measure your yogurt and bread properly, with this method or a kitchen scale! (? That's the one I own and adore. Too much of either ingredient will make your cookies taste cakey or dry, rather than chewy. This is especially true of the oats--they act like little sponges and consume lots of moisture out of the cookie dough!
Ripe bananas- ideal for baking! Really like all @amybakeshealthy's yummy & wholesome banana recipes!
Watch these bananas? And all those brown spots? When it comes to baking bananas, brown = amazing! I ? additional speckly bananas because they have so much bright, bold taste --along with additional sweetness! That's the minimum amount of brown that I recommend. More is better!
The remaining portion of the cookie dough's sweetness comes from a different pure ingredient... Pure maple syrup (such as that!) . You want the kind that comes directly from maple trees, which is normally sold in skinny glass jars or squat, round plastic jugs. Forget the pancake sugar and sugar-free syrup!

The pancakes include even more natural sweetness! The recently purchased, extra plump, perfectly tender ones are perfect... But if you have older, somewhat dried out raisins (hmm... it seems absurd to explain dried fruit as dried out! ) , that's fine!
Just add them to a microwave-safe bowland pour water on top until they're completely coated. Seal plastic wrap across the top, and then microwave the bowl on high for 1 second. If you let the peppers sit mixing together the cookie dough, this little hint hydrates them so they're exceptionally succulent --and that makes a large difference in these cookies once they're baked!

Yields: 15 biscuits
The recognizable cozy spices and plump blueberries make these even more irresistible. They will keep for at least one week if kept in an airtight container in the refrigerator--if they last long!
1 cup (100g) instant oats (gluten-free if necessary and quantified like this)
3/4 cup (90g) whole wheat or gluten-free* flour (quantified like that )
1 1/2 tsp baking powder
1/4 tsp salt
2 tbsp (28g) unsalted butter or coconut oil, melted and cooled slightly
1 teaspoon vanilla extract
In a medium bowlwhisk together the yogurt, milk, baking powder, cinnamon, and salt. Stir in the maple syrup. Add in the flour mixture, stirring just until incorporated. Fold in the raisins. Let the cookie dough rest for 10 minutes.
With a spoon and spatula, dip the cookie dough to 15 curved scoops on the prepared sheet, and apply to the desired thickness and width using The Healthiest Cookies EVER (Paleo, Vegan) Detoxinista a spatula. Bake in 325°F for 10-12 minutes.
Notes: It's extremely important to quantify both the wheat and oats correctly employing this method or a kitchen scale. (? That's the one I have and love!) Too much of either would dry out of the biscuits and abandon them cakey rather than chewy.
Immediate oats are also referred to as quick-cooking or minute oats. They arrive in huge canisters, just like conservative oats. They are not the ones in the tiny flavored loaf of bread. To make your own, add the same quantity of classic oats to a food processor, and pulse 10-12 times or until the oats are about 1/4 into ? of their original size.
For the gluten-free flour, I suggest the following blend: 1/2 cup (60g) millet flour, 2 tablespoons (15g) tapioca flour, two tablespoons (15g) brown rice , as well as 1/2 tsp xanthan gum. Most store-bought fermented flour blends (such as that one!) Will also do the job, if quantified like this.
In case your pancakes are old, drier, and not very plump or juicy... Add them to a microwave-safe bowland pour water on top till they're totally coated. Seal plastic wrap across the top, and then microwave the bowl on high for 1 second. Should you allow the peppers sit mixing together the cookie dough, then this small trick hydrates them they're really tender and succulent!
